Easy Tomato Chicken

                             


Yield: 1 portion

Ingredients: 

-100 g cooked chicken, sliced
-1 cup canned diced tomatoes
-1/4 cup zucchini, sliced
-1/2 portobello mushroom, sliced
-2 tbsp black olives, sliced
-1 garlic clove, crushed
-2 tsp capers
-2 tbsp onion, chopped
-2 tsp olive oil
-Salt and pepper, to taste
-Italian seasoning, to taste

Steps:
  1. In a pot, heat the oil and brown the onion with the garlic. 
  2. Add all of the ingredients and bring to a boil, reduce and cover.
  3. Let simmer until the zucchini is tender.

Dijon Chicken Fingers + Mango Salsa


Yield : 5-6 chicken strips

Ingredients: 

For the chicken
-1 chicken breast cut into strips
-1/3 cup breadcrumbs
-1 tbsp parmesan
-1 tbsp italian spices
-2 tbsp dijon mustard

For the salsa
-1 mango, diced
-1/2 red bell pepper, diced
-3 tbsp fresh coriander, chopped
-3 tbsp red onion, chopped
-2 tbsp olive oil
-lime juice to taste
-salt and pepper to taste
-hot sauce to taste

Steps:

  1. Preheat the oven at 350. Line a baking sheet with parchment paper. Reserve.
  2. In a small bowl, mix together the breadcrumbs, parmesan and italian spices. Set aside.
  3. Spread a thin layer of dijon mustard on both sides of the strips. 
  4. Toss each chicken strip into the breadcrumbs mixture. Place on baking sheet.
  5. Cook for 13 minutes then flip and cook for another 12 minutes.
  6. While cooking, in a medium bowl, mix together all of the ingredients for the salsa. 
  7. Serve immediately with the mango salsa.

Cranberry Almond Muffins



Yield: A dozen

Ingredients:

-1 ¾ cup all-purpose flour
-½ cup whole wheat flour
-1 tsp baking powder
-¾ cup white sugar
-½ tsp baking soda
-½ tsp salt
-½ tsp ground nutmeg
-⅓ cup melted butter
-½ cup sliced almonds
-1 ½ cup frozen cranberries sliced in half
-1 egg
-1 cup milk

Steps:
  1. Preheat the oven to 400 degrees fahrenheit. Line 12 muffins cups with paper liners and set aside.
  2. In a big bowl, mix together the milk, egg and butter. Set aside.
  3. In a medium bowl, mix together the flours, baking powder, baking soda, sugar, salt and nutmeg. 
  4. Slowly incorporate the dry ingredients to the wet ones. Mix until uniform.
  5. Fill muffin cups with approximately ½ cup batter. 
  6. Bake for 10 minutes at 400. Then, reduce at 350 and bake for another 7 minutes or until a toothpick comes out clean. 
Enjoy!

Note: If you are a chocolate lover like myself, you can add ¼ cup of white chocolate chips and reduce the quantity of almonds to ¼ cup.

Chicken, Sun Dried Tomato, Meaux Mustard, Sage Pesto & Old Cheddar Panini





Yield: 1 sandwich

Ingredients:

-2 slices of bread (e.g ciabatta)
-1/6 to 1/4 cup sage pesto
-3/4 cup shredded chicken or turkey (Hello Thanksgiving leftovers!)
-5 sun dried tomatoes
-1 tbsp meaux mustard (can be dijon)
-2 thick slices old cheddar

Steps:
  1. Layer one side with pesto, a slice of cheddar and chicken. For the other side, spread mustard, place the remaining slice of cheddar and tomatoes.
  2. Over medium heat, spray a medium size skillet with PAM. Place the sandwich and press it down with a spatula. Wait 30 seconds and flip.
  3. After another 30 seconds, flip it again and reduce the heat to low. Press it down again. Let it cook until the cheese is melted, for about 4 minutes. Don't forget to flip it halfway through.

Review - Limited Edition Kit Kat Mini Flavors of Western Japan

A few weeks ago, I was on eBay and saw those and couldn't resist. I had to try them. My excuse was that I would do a quick review for the blog. I know, I know. I can be pretty helpful when chocolate is involved. The box contains 2x6 mini sizes for $US 25.85. Without further ado...




Matcha Green Tea
The definition of perfection. Would eat 100 of them.

Citrus
Strong perfume taste but still, somehow, weirdly good.

Strawberry
Strongest/the most vile aftertaste of fake strawberries and another weird flavor that I can't even put my finger on. Couldn't eat more than half of the mini size bar.

Roasted Green Tea
It tastes nothing like tea but more like mocha. Did not wish to finish the bar. Again, weird aftertaste.

Cinnamon Cookies
Authentic taste but since I'm not a fan of cinnamon in general, I didn't finish it but I can understand that cinnamon lovers would be obsessed.

Sweet Purple Potato
I couldn't remember what the flavor was and couldn't tell by the picture and the writing because, sadly, I don't know japanese. It was good and now that I know what it is, doesn't taste anything like sweet potato. I don't know if I would finish the entire bar, though.

Would I buy this assortment again?
I had a great time trying everything. So based on that, I would absolutely even though the price is ridiculous for the amount you get.

Sage Pesto Crusted Salmon


Yield: 1 serving

Ingredients: 

-1 salmon piece

For the sage pesto (inspired by notwithoutsalt)

-1 cup sage, packed
-3 garlic cloves
-1/2 cup toasted pine nuts
-1/4 cup grated parmesan
-1/4 cup italien parsley
-1/4 cup mint
-1 tsp lemon zest
-1/2 cup olive oil
-2 tbsp freshly squeezed lemon juice
-Salt and pepper

Steps: 
  1. Preheat the oven at 350 degrees F.
  2. In a food processor, blend the sage, garlic, pine nuts, parmesan, parsley and mint together. With the machine running, incorporate the olive oil, lemon juice and zest. Seasoned with salt and pepper to taste. 
  3. Line a oven safe dish with aluminium paper.
  4. Place the salmon in the dish and brush it with pesto.
  5. Put in the oven for 20-22 minutes or until fully cooked.
